As we are closed during the Welsh Firebreak, apart from Juniper Place Swansea which is serving Takeaway Sunday Roasts, we are running a series on the recipes behind our bar/restaurant favourites. Starting with the Singapore Sling:

Widely regarded as the national cocktail of Singapore, the gin-based cocktail, Singapore Sling, was created at the legendary Raffles Hotel at the turn-of-the 20th century by Hainanese-Chinese bartender, Mr. Ngiam Tong Boon. 

Who knew that this famous cocktail, a favourite of Joseph Conrad and Rudyard Kipling would still be served to this day at the hotel’s Long Bar where Ngiam Tong Boon was such a doyen.

Here is the famous Raffles Hotel recipe:

Ingredients

30ml Gin
15 ml Cherry Brandy
120 ml Pineapple Juice
15 ml Lime Juice
7.5 ml Cointreau
7.5 ml Dom Benedictine
10 ml Grenadine
A Dash of Angostura Bitters
Garnish with a slice of Pineapple and Cherry

Directions

Shake with ice
Strain into an ice filled collins glass
Garnish with cherry and slice of pineapple

Juniper Place Singapore Sling

Our Singapore Sling benefits from an anonymous ‘Gin’ being replaced by our own Cygnet Gin, distilled on the premises!

As described on our Drink Menu, our version is as follows:

Leggy and vibrant, this delightful tipple is made up of Cygnet gin, cherry brandy, Benedictine, Cointreau, pineapple juice and shaken together with fresh limes. A little added Grenadine gives it that pink hue,  with aromatic bitters – a Maraschino cherry tops it off.

We also offer a Low ABV% version called the Singapore Fling, which comprises:

Pineapple juice, grenadine, raspberry syrup & lemon juice. Garnished with a lemon wheel and a raspberry
