Described on our drinks menu as rich and silky, pretty-in-pink cocktail, The Cover Club is another those times, classic pre-prohibition era cocktails.
Ours comprises our own Cygnet gin, with dry Martini, raspberry syrup plus Better Bitters. Garnished with raspberry dust, finished with an edible flower.
A gin-sour style cocktail, the smooth and sophisticated Clover Club has a long and illustrious history before being re-discovered in New York. The egg white is employed to emulsify and give a creamy, foamy top to the cocktail.
The drink is named after a Philadelphia men’s club which used to meet at the Bellevue-Stratford Hotel, from 1896, and the recipe was first made print in 1917.
Despite its popularity amongst industrialists and other luminaries, the drink went out of fashion. Its popularity has certainly rallied in recent years, not least thanks to the eponymous Clover Club, established by mixmaster Julie Reiner, just over a decade ago in Brooklyn New York.
It is described as a “throwback to the golden age” of cocktail culture, which is what the Clover Club cocktail at Juniper Place is all about.

Ingredients
4.5cl Gin
1.5cl lemon juice
1.5cl raspberry syrup
1 egg white or Vegan Alternative Aquafaba 20 ml or Cocktails Foamer 4 drops
Method
Dry shake ingredients to emulsify, add ice, shake and serve straight up.
