The Aviation, a Juniper Place favourite, is a classic cocktail that is as popular today as when it was invented in the early 20th century. Our version features our own Cygnet Gin, distilled on-site in our own craft distillery in Swansea. This cocktail is delicately perfumed, perfectly balanced and also features Maraschino liqueur Crème de Violette, shaken and garnished with a plump Maraschino cherry.

The Aviation was the creation of Hugo Ensslin, head bartender at the Hotel Wallick in New York, in the early twentieth century.

The first published recipe for the drink appeared in Ensslin’s 1916 Recipes for Mixed Drinks.

Ingredients

2 ounces gin
¼ ounce maraschino liqueur
¼ ounce crème de violette
½ ounce fresh lemon juice
Garnish with a maraschino cherry or flamed lemon peel

Method

  • Prepare a chilled Martini glass and gather the gin, maraschino liqueur, crème de violette, and lemon juice.
  • Fill a cocktail shaker with ice and pour in ingredients.
  • Shake well.
  • Strain into the Martini glass.
  • Garnish with a maraschino cherry or lemon peel.
